Best Banana Bread

When I see some bananas covered in brown spots, I don’t think “ewwww.” I see an opportunity. My mom has the same motivation and always makes the most delicious banana bread. This weekend, celebrate this beautiful Boston weather and Mother’s Day  with some delicious banana bread from scratch!

I didn’t have a recipe for banana bread on hand— that’s a lie, I just like making up my own recipes— so I looked online for an easy recipe. I found one that got mixed reviews on AllRecipes.com and made up my own recipe from the base of that one. Am I a baking nerd? Perhaps, but it has delicious results.

Best Banana Bread

Ingredients:
½ cup butter, softened
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 ½ tsp pumpkin pie spice (or a combo of ginger, cinnamon, and nutmeg)
½ teaspoon salt
½ cup vanilla greek yogurt
3 bananas, mashed

Directions:
1.     Preheat the oven to 350 degrees. Grease a 9×5” pan.
2.     In a medium bowl, sift together flour, baking soda, salt and spices. In a large bowl, cream together butter and sugar. Add in the eggs and vanilla. Mix well.
3.     Combine flour mixture by slowly adding to butter mixture in parts. Fold in yogurt and bananas.
4.     Bake for 1 hour. Cool on wire rack in pan for 15 minutes, then remove bread from pan and place on wire rack. This tastes the best when still hot!
